This is a fresh, moist cake that is just incredable! I can not recommend it enough!
3 cup Flour
2 cup Sugar
1/2 teaspoon Salt
1 1/2 teaspoon Baking Soda
2 teaspoon Cinnamon
1 1/4 cup Oil
3 teaspoon Vanilla
3 or 4 cups peeled, cored, chopped Apples
1 cup chopped up Walnuts or Pecans
1 cup Powdered Sugar
1 teaspoon Vanilla
Sift together flour, sugar, salt, soda, and cinnamon.
Add oil, mix with spoon. Add eggs and vanilla, mix.
Work in apples and nuts.
Bake in greased and floured Bundt pan at 350 degrees for 1 hour (or less).
DO NOT OVERBAKE.
Turn out of pan immediately onto rack; cool completely.
In small saucepan, mix powdered sugar, vanilla, and a small amount of water to make a thick glaze.
Heat on low until sugar melts.
Brush on cooled cake.
