This is the potato salad Tim grew up with. His Mom made it as a side for all family gatherings.
Eggs: Chop 1 dozen hard boiled eggs (quarted, then cut into thirds)
Bacon: Fry 1 pound of bacon, well done but not burnt. Crumble into large bits.
Potatoes: Peel enough potatoes to fit in a large pot (about 2 gallon size)
Cut into quarters and boil or cook in a pressure cooker / Instant pot
Once cooked, cut into about 3/4 inch cubes.
Miracle Whip: When all ingredients have cooled, add enough Miracle Whip to cover everything.
Ready to serve!
