Denise's Split Pea Soup

Great for a cold weather dinner, this recipe comes out perfect every time. I never did look up how to make split pea soup, I just figured it out myself!

Ingredients

Ingredients:

3 Tbsp Olive oil
1 Container of Trader Joe's Mirepoix mix of chopped up carrots, onions, and celery (14.5 Oz)
2 Quarts of chicken or vegetable broth
2 Cups dried peas
Chopped Ham, if desired

Pea Soup

Recipe:

  • Soak the peas overnight.
  • The next day rinse and drain them.
  • In a Dutch oven, sauté the onions, celery, and carrots in the olive oil to bring out their flavors.
  • Add the rinsed and strained peas, the ham, and the broth.
  • Simmer covered for a of couple hours, stiring every 1/2 hour, until the peas are soft and tender.
  • Use an immersion blender to purée the soup until smooth.
  • Serve.
